Chinese Cooking At Home

Have you ever wondered about making Chinese food at your own home? Not only is it possible, it can be done fairly simply! Chinese cooking is like many other things in the Chinese culture… it is based on balance. Spicy dishes will have a mild component. If it is a soft dish, it will have an ingredient offering a different texture.

Before you begin making Chinese recipes at home, you need to learn a few tricks of the trade. The first one is to always prepare your ingredients before you begin to cook. There are many Chinese recipes that cook quickly. You need to have all your ingredients prepared and ready to use at a moment’s notice. Do not mix up any of your ingredients unless the recipe specifically says to do so.

If you are going to marinade the meat, make sure it is fresh. When you cut it up into bite size pieces, cut it across the grain for tenderness. Stir fry the meat first. Remove it from the wok and then cook your vegetables. The meat will be added in before you add the sauce.

If you prefer tofu, drain it well before cooking. The tofu will absorb the flavors of the dish better if you drain it. Cleavers are a great tool to have on hand to cut your tofu, vegetables, and meats, but it is not absolutely necessary. A normal kitchen knife works great.

If you are cooking with leafy greens, wash them ahead of time so they are dry before cooking. Adding wet greens cools down your wok. When it is time to cook your vegetables, add the toughest and thickest ones first. They will take longer to cook. Broccoli, cabbage, carrots, and kohl rabi will take longer to cook than bok choy, spinach, and chard. Add the leafy vegetables last. They only need a minute or less to cook. If you are not sure what order the vegetables should be cooked in, cook them each separately, and remove them before adding the next one. At the end, return all the ingredients to the wok before adding the sauce.

When you need to use soy sauce, always choose a light soy sauce unless the recipe calls for a dark soy sauce. Kikkoman and other commercial brands are usually fine to use as a light soy sauce. If you are deep frying part of your meal, it is easy to tell when the oil is ready by inserting a chopstick into the oil. If bubbles form around the chopstick, the oil is hot. If they do not, the oil still needs to get hotter.

There are many delicious Chinese dishes that use the above techniques. Sesame chicken, chow mein and garlic chicken are just a few of the wonderful meals you can make once you learn these techniques. Once you have a few attempts under your belt, you can start experimenting with your own recipes.

Now that you have learned a little bit about how to cook Chinese food, you can try making some yourself. According to one cooking instructor, all you need is a hot stove and a sharp knife. Now that you can make Chinese food at home, your family will be very happy.

Clay Cookware For Every Kitchen

Our friends had us over for a scrumptious dinner last week – they served lovely fresh steamed veggies with a juicy pot roast and mini roasted potatoes. And how were these scrumptious dishes prepared? In clay! Generally, when we plan on roasting a turkey, baking a fish, cooking a chicken or steaming fresh vegetables, we usually use cookware made of stainless steel, aluminum, copper, or ceramic. However many people around the world use cooking vessels made of clay. Even here in the United States there are many loyal clay pot users who imagine the only people who don’t enjoy clay pot cooking are the ones that haven’t tried it.

I had never heard of cooking in clay before, but it turns out that many people have been using clay for cookware over thousands of years. It dates back to when beef or poultry was packed in mud and placed into a fire’s embers. While the clay dried in the fire, the meat was cooking inside. When finished, they would then break the clay open to enjoy the delicious, juicy meal that had cooked inside.

Another great thing about cooking in clay is the wonderfully healthy aspects to the cooking method. That’s because the moisture released from the clay replaces the need to add extra oils and fats to the dish. Clay cookware must be soaked in water prior placing the ingredients inside so that the porous material can absorb the moisture that will later be released during the cooking process. Never place a clay pot into a pre-heated oven as it may cause it to crack. Instead place the filled pot into a cold oven prior setting the oven temperature, generally in the low to mid 400 degrees.

You’ll find an array of recipes available that have been adapted for cooking in clay. One example of a tasty dish is Beggar’s Chicken. You simply combine chicken legs with a few spices such as ginger, pepper, and garlic plus some flavoring sauces such as sherry and soy. After baking in your clay cooker, serve with a side of rice pilaf, pasta and a fresh salad or vegetable.

Now you can also use clay cookware as a stockpot or slow cooker, perfect for making anything from casseroles to soup. Our family loves my homemade chicken noodle soup, so that’s something that I’m going to use my clay pot for next. I’d also like to try to make a good beef noodle casserole or some au gratin potatoes in the pot to see how good it tastes when it’s cooked slowly to perfection.

I purchased Romertopf clay, starting with the medium clay baker, but I think I’ll be adding to that soon. The cookware is quite attractive and can even be used as a serving dish. The pots come in different sizes and styles and range from garlic bakers to fish roasters, apple bakers, and more. If you enjoy cooking and are in the market for some new cookware, then be sure to check out the selection of clay cookware available. You’re sure to love cooking in clay, and you’ll probably get hooked like a lot of other clay cookware fans.

One classic way to cook your chicken is to bake it in a covered clay cooker. You’ll find a great selection of clay cookware from Romertopf cookware .
