BAKED TOMATOES Ingredients: 4 or 5 tomatoes, salt, pepper, fresh breadcrumbs and a knob of butter. This will serve 3 people
Method: Remove any stalks from the tomatoes and cut them into thick slices. Place tomato slices in a deep baking-dish and season to taste with pepper and salt and most of the butter. Cover them with the bread crumbs and dot the rest of the butter on top (or melt it gently and drizzle it over the top). Bake for between 20 minutes and half an hour in a moderate oven. Serve very hot. This is a great and more unusual vegetable to serve with any meal, especially meat or fish but also goes well with basically anything.
