Biryani is a dish that is prepared using Meat and Rice, layered and prepared together with various spices… It springs from the Persian word ‘Birian’ which implies roasting before cooking.
This special delicious recipe has its origins in Persia. The story goes that the nomads and the tribals carried lots of dried meat and rice with them during their travels, and they layered the rice and the meat and added some dry herbs and nuts and let it simmer on a wood fire for for a while and later buried it in the sand for a couple of hours, after which the dish was considered complete. It was a fairly simple form of cooking Biryani those days, making use of nature and its resources.
Nowadays there are many varieties of Biryani prepared using a lot of diverse cooking styles. There are probably more than a hundred varieties of Biryani prepared using various combinations of meat and vegetables.
Biryani has Rice and Meat as its basic ingredients. The rest of the ingredients, vary depending on the variety and style of the Biryani being cooked.

A great Biryani consists of perfectly cooked meat and the right blend of spices and herbs, cooked along with rice. The Rice and Meat is never mixed while cooking. They’re both cooked independently. The last phase of the cooking consists of layering the two alternatively and generally cooked either in an oven or on traditional wood fire, using low heat.
